Francois Voyer XO Extra (700 ml)

When Pierre Vaudon assumed direction of François Voyer in 2017, he inherited a paradis whose oldest stocks predate most major Cognac brands' entire inventories — an unbroken cellar reserve stretching back to the 1870s, built on 28 hectares of estate Ugni Blanc rooted in Campanian chalk beneath Verrières and Ambleville, the geological spine of Grande Champagne 1er Cru. That chalk drains aggressively, stresses the vine, and produces eaux-de-vie of pronounced acidity and structural tension — the very architecture that rewards decades of aging.

The Extra is assembled from eaux-de-vie aged 32 to 45 years, beginning in virgin Limousin oak for approximately three years before transfer to refill casks sourced from Limousin, Bercée, Gâvre, and Reno Valdieu forests. Crucially, Voyer ages stocks across both damp and dry cellars simultaneously, modulating the rate of oxidative development and aromatic extraction — a deliberate dual-environment strategy that shapes the Extra's layered rancio character. Distillation is performed sur lies in traditional Charentaise copper alembics, with the heart cut made by the distiller's nose alone — a practice almost entirely abandoned by the négociant trade.

What separates this expression from peers at the XO tier is the minimum 32-year floor: the Extra occupies the band between Voyer's XO (20–30 yrs) and Hors d'Age (40–60 yrs), a granular age stratification most houses collapse into a single XO designation. Dried fig, beeswax, and chalk-driven tension persist through a long, rancio-marked finish.
