Hennessy X.O Extra Old Cognac Limited Edition (700 ml)

Maurice Hennessy invented the XO category in 1870 — not for commerce, but as a private reserve for family and friends. That origin as a personal standard, rather than a market tier, explains the blend's ambition: over 100 eaux-de-vie drawn from Grande Champagne's shallow clay-limestone chalk (which drives the long, slow oxidation essential to deep aging) and the clay-flint soils of Borderies (which contribute a rounder, nuttier character distinct from the Champagne crus).

Production begins with Ugni Blanc harvested in September–October, fermented with native wild yeast for 5–7 days with no added sugar or sulphur, yielding a high-acid base wine at 8–10% ABV — the structural backbone that survives double distillation in traditional Charentais copper pot stills. Hennessy's defining technical transgression: distilling both with and without lees, then reintroducing heads and tails into the brouillis before the second pass, concentrating congeners that most houses discard. The resulting eaux-de-vie are aged in Limousin oak barrels — including stock from Hennessy's own forests, where trees must reach 80+ years before felling — across 65 cellars, with riverside chais near the Charente producing mellower spirits and drier inland chais yielding more characterful ones. The XO blend draws on up to 30 years of aging, assembled by the Fillioux family, sole Master Blenders for eight unbroken generations. As a Limited Edition, the bottle format distinguishes this from the standard XO release. Bottled at 40% ABV, lightly filtered.
