The house sources Williams pears — the varietal standard for this category — and macerates whole fruit in neutral spirit before distillation in copper alembics. The spirit is bottled unaged, a deliberate choice that preserves the delicate volatile compounds characteristic of fresh pear rather than allowing oak or oxidative development. A bottle is often placed around a growing pear during cultivation; the fruit develops inside the glass and is later filled with the distillate — a visual signature of the category. The result captures the pear's floral and stone-fruit aromatics at their most vivid, without the mellowing that extended aging would impose.
