When Jean-Baptiste Camus founded the house in 1863, the Borderies cru was already prized for its violet-and-walnut character — but it was the fifth-generation decision to patent the 'Instensity' method in 2003 that codified what Borderies could become: from twenty one-litre samples drawn from the heads fraction of each second distillation, the single litre carrying the highest ester concentration is identified and reintegrated into the hearts, producing an eau-de-vie of measurably greater aromatic density than the terroir delivers unaided.

The fruit originates from 188 hectares of estate vineyards at Château du Plessis, the largest single-producer block in the Borderies — the smallest of Cognac's six crus. Clay-limestone soils dense with silex (flint) give Borderies its signature roundness and floral lift, a profile structurally distinct from the drier, more austere Grande Champagne style of the multinational-owned houses. Distillation is sur lies in nine copper Charentais alembics, adding ester complexity and textural weight before the spirit ever touches wood.

Aging runs a minimum 10 years (average 12–14) in 350 L Limousin oak casks with very light toast and a strong preference for previously used wood — a deliberate choice to preserve floral aromatics that new oak would mask. No boisé, no added sugar. The master blender samples every individual cask annually across a six-month cycle before blending decisions are made.

Camus is the only major Cognac house offering a commercially available 100% single-estate, single-cru Borderies XO — a category it pioneered in 2000 — making this the category's sole terroir-pure reference point at this age tier. As a non-vintage blend, drinking window is open now and stable over the next decade with proper storage.
