When Pierre Vaudon assumed the cellar master role in 2017, he inherited a paradis reserve stretching back to the 1870s — an unbroken lineage of eaux-de-vie that gives the XO Gold its structural backbone before a single blending decision is made. That continuity matters technically: the oldest stocks in the assemblage carry rancio character accumulated across decades, impossible to replicate by accelerated aging.

The 28-hectare estate in Verrières and Ambleville sits on Campanian chalk — the same deep, porous geology that forces Ugni Blanc roots downward, restricting yield and concentrating the high-acid must that survives double distillation with aromatic integrity intact. Wild inter-row vegetation amplifies vine stress and flavour density.

Distillation proceeds sur lies in traditional Charentaise copper alembics — a practice largely abandoned by large négociant houses — adding textural richness before aging begins. The XO tier spends 20–30 years in cask: approximately three years in virgin Limousin oak, then extended time in refill casks sourced from Limousin, Bercée, Gâvre, and Reno Valdieu forests. Damp and dry cellars are used in deliberate rotation to modulate aromatic development.

What separates this XO from category peers is the sur-lies distillation combined with a minimum 20-year aging floor — a combination that produces rancio complexity at a price point where most houses deliver far younger stock.

The current release shows the spice-forward, slow-oxidative character that defines Grande Champagne at full maturity; drink now through the next 15+ years with no loss of complexity.
