Rémy Martin's founding commitment — maintained since 1724 — to source exclusively from Grande Champagne and Petite Champagne, the two highest-ranked Cognac crus, is the structural fact behind every bottle of XO Excellence. No other major house applies this restriction across its entire range; rivals blend from all six crus, reserving Fine Champagne status for prestige tiers only.

The deep chalky-calcareous subsoil of these two crus is the engine of the house style: permeable limestone retains moisture through dry seasons, sustaining grape acidity and concentrating aromatic compounds in the Ugni Blanc fruit that would otherwise flatten in heavier soils.

The XO is assembled from up to 400 individually selected eaux-de-vie, the youngest aged a minimum of 10 years, the oldest extending beyond 30. A defining house signature: distillation on the lees — the residual yeast sediment retained in the still — a practice most Cognac houses abandon before distillation but which Rémy Martin applies house-wide, adding measurable aromatic depth at the source. Maturation proceeds exclusively in French Limousin oak from trees at least 100 years old, seasoned outdoors for 2–3 years; the wide grain of Limousin oak drives pronounced vanilla and spice exchange across the long aging arc.

The XO's special distinction within the range is its span: a single blend bridging a full 20-year maturation window, creating textural density and dried-fruit concentration that the VSOP's shorter aging cannot reach, bottled at 40% ABV.
