Francois Voyer Hors d'Age Cristal (700 ml)
฿67,900
Pierre Vaudon, cellar master and trained oenologist, inherited a paradis whose oldest stocks predate most major Cognac négociant inventories — the unbroken reserve at Le Maine Verret, Verrières, stretches back to the 1870s, and it is from this depth that the Hors d'Age Cristal is assembled. The 28-hectare estate sits on Campanian chalk in the communes of Verrières and Ambleville, Grande Champagne 1er Cru: the same porous, high-pH geology that forces Ugni Blanc roots deep, concentrating acidity and building the structural backbone that sustains 40 to 60 years of aging. Distillation is performed sur lies — on the full lees — in two traditional Charentaise copper alembics, a practice largely abandoned by larger négociant houses; the cut is made by nose alone, not instrument. Eaux-de-vie begin in virgin Limousin oak for approximately three years, then transfer to refill casks sourced from Limousin, Bercée, Gâvre, and Reno Valdieu forests, with aging split between damp and dry cellars to modulate the pace of oxidative development. The defining transgression here is scale: at this age tier, most houses blend from purchased stocks across multiple crus; Voyer draws exclusively from Grande Champagne estate and partner fruit, keeping the chalky-mineral terroir signature intact through six decades of wood contact. The result is a rancio of uncommon precision — dried walnut skin, camphor, and oxidative depth — rather than the diffuse sweetness common to blended Hors d'Age releases. Drink now through 2040+; decant 30 minutes.
