The region's dry, herb-dense landscape is not incidental — it is the botanical supply chain.
The production follows the classical distilled absinthe method: a cold maceration of grand wormwood, green anise, and sweet fennel in neutral grain spirit, followed by direct alembic distillation to capture aromatic compounds without artificial coloring shortcuts. The characteristic green hue is achieved through a post-distillation secondary herb steep — petit wormwood, hyssop, and melissa — a step many modern producers omit to cut costs. No sugar is added, placing this firmly in the blanche/verte tradition rather than the sweetened pastis category.
What separates this expression is the deliberate retention of thujone-bearing wormwood at levels compliant with EU regulation, preserving the bitter, resinous backbone that defined pre-ban absinthe and that most contemporary brands sand away. The louche — the milky opalescence triggered by water — is dense and slow-forming, a reliable indicator of genuine anethole concentration.
