Absente was formulated in the early 2000s as a direct answer to the century-long absinthe prohibition: by substituting Artemisia absinthium (grand wormwood) alongside Artemisia abrotanum (southern wormwood), the distillery satisfied regulators while preserving the botanical architecture that defined pre-ban absinthe. The Van Gogh branding references the painter's documented obsession with the spirit — a concrete historical anchor, not mere decoration.
Produced in southern France, the liqueur draws on a core botanical trinity of grand wormwood, green anise, and sweet fennel, macerated in a neutral grain base before distillation. The final blend is sweetened to approximately 110 g/L residual sugar and bottled at 55% ABV, placing it at the stronger end of the liqueur category. Unlike traditional distilled absinthes that remain unsweetened, Absente's added sugar classifies it legally as a liqueur — the key distinction from a verte or blanche absinthe.
The louche effect on dilution with cold water remains intact, driven by trans-anethole crystallisation from the anise and fennel oils. Drink long over ice or in a classic absinthe drip ritual.
