La Maison Fontaine's blanche absinthe originates from Pontarlier, the Doubs region of eastern France that became the epicenter of absinthe production in the 19th century. The terroir—limestone-rich soils and cool continental climate—shaped the region's reputation for precision distillation and botanical sourcing.
This expression follows the blanche (or verte pâle) method: a neutral grain spirit base is infused with a macerated blend of botanicals—primarily anise, fennel, and wormwood—without the secondary coloring step that produces traditional verte. The result is a clear, uncolored spirit that preserves the raw aromatic profile of the herb charge. No artificial colorants; the transparency is the point.
The special feature lies in its historical accuracy: blanche absinthe predates the vivid green versions popularized in the Belle Époque, representing the original Pontarlier house style before marketing demanded visual drama. This is the working absinthe of 19th-century distillers, not the theatrical version.
Bottled at standard absinthe proof (typically 45% ABV), it is best approached as a ritual: diluted with cold water and a sugar cube, the louche (clouding) reveals the full botanical complexity. Drink now; no aging required.
