Pontarlier, in the Doubs département of the Franche-Comté, was the undisputed capital of absinthe before prohibition swept France in 1915 — at its peak, the town ran over twenty distilleries. Cristiani Parnasse revives that lineage in the same valley, drawing on the Vallée de l'Absinthe tradition of cold-alpine botanicals grown at elevation in the Jura foothills, where the continental climate concentrates volatile oils in Artemisia absinthium (grand wormwood), Pimpinella anisum (green anise), and Foeniculum vulgare (fennel). All three botanicals are macerated in neutral grain spirit before distillation, following the pre-ban French method rather than the cheaper cold-compounding route. The characteristic louche — the milky opalescence that blooms when iced water is added — is produced entirely by the natural precipitation of trans-anethole from the fennel and anise distillate, with no artificial emulsifiers. What sets Parnasse apart within the Cristiani range is its natural green coloration, achieved by a post-distillation maceration of petite wormwood, hyssop, and melissa — a step that also adds a secondary herbal layer absent in blanc expressions. Drink at a 1:4 to 1:5 absinthe-to-water ratio over a slow drip; the louche fully develops within 60 seconds.
