Paso a Paso Verdejo is sourced from La Mancha's high plateau, where poor sandy soils over clay subsoil and limestone patches, combined with a harsh continental climate averaging just 242 mm of annual rainfall, force vines to dig deep and produce concentrated, tightly structured fruit. Dry-farmed and organically managed, the vineyards experience large diurnal temperature swings during ripening that preserve natural acidity — the defining structural feature of this bottling. Fermentation is carried out at controlled low temperature to lock in Verdejo's characteristic aromatic lift, consistent with the house's minimal-intervention philosophy across its white range. What sets this expression apart within the Paso a Paso line is its deployment of Verdejo — a variety more associated with DO Rueda's gravelly riverbanks — in the limestone-clay soils of La Mancha, producing a leaner, more mineral-driven profile than the lush, herbaceous benchmark style of the north.
