Saint-Véran sits on Jurassic limestone and clay soils in the southern Mâconnais, where the calcareous subsoil drives the chalky, taut character that separates it from the richer, more voluptuous Pouilly-Fuissé to its north. The 2021 growing season — marked by spring frost, disease pressure, and sharply reduced yields — compressed the fruit and amplified the appellation's natural acidity, producing a Chardonnay of linear minerality and high acidity rather than the broader, fruit-forward profile of warmer years. Vinification follows Bichot's regional-white protocol: predominantly stainless steel fermentation and aging, with a proportion of used oak (approximately 20%) to add textural weight without obscuring the limestone-driven freshness. No new oak is deployed at this appellation level, preserving the site's cool-climate precision. What distinguishes this expression is its vintage-driven austerity — 2021 Saint-Véran behaves closer to a Chablis in structure than to its Mâconnais peers, a consequence of the season rather than a stylistic choice. Drink 2024–2027 for maximum tension; the acidity will soften marginally with another year of bottle age.
