−7%Louis Latour's roots in Burgundy stretch to 1731, but the house's négociant reach extends north to Chablis, where the Montmains Premier Cru occupies the left bank of the Serein river — a lieu-dit prized for its dense Kimmeridgian clay-limestone soils packed with fossilised oyster shells (exogyra virgula), which drive a saline, chalky tension that separates Montmains from the flintier, more open-knit Fourchaume on the opposite bank. The cool continental microclimate and north-northwest-facing slopes slow ripening, preserving the high natural acidity that defines the appellation's structural identity.
As a négociant-éleveur cuvée, Louis Latour sources from established Montmains growers and applies house élevage: 100% Chardonnay, fermented and aged in a combination of stainless steel and neutral oak to preserve primary fruit and mineral precision rather than impose the toasty, new-oak signature reserved for the house's Corton-Charlemagne Grand Cru. Malolactic fermentation proceeds to soften the appellation's characteristically aggressive acidity without erasing it.
What distinguishes this expression within the Latour range is its deliberate restraint — where the house's Côte de Beaune whites receive 100% new French oak with no lees-stirring, Montmains is handled to let Chablis terroir speak rather than house style dominate. The 2021 vintage in Chablis delivered naturally high acidity and taut, concentrated fruit after a frost-reduced crop, producing wines of notable tension and longevity; drink 2024–2030.
