Gérard Bertrand built his orange wine program as a deliberate provocation: the world's largest Demeter-certified biodynamic producer applying red-wine vinification logic to white and aromatic Languedoc varieties — no added sulfites, no compromise. The blend draws from across the Languedoc-Roussillon estate network, assembling Chardonnay, Grenache Blanc, Viognier, Marsanne, Mauzac, Muscat, and Clairette — varieties whose warm Mediterranean soils and strong coastal winds (reducing disease pressure and concentrating phenolics) make extended skin contact viable without chemical intervention. Whole-bunch or semi-carbonic maceration runs 10–15 days with skins and seeds in contact, extracting tannin, colour, and aromatic compounds in the manner of a red vinification. The wine then moves through oak vat aging of 2–3 weeks followed by terracotta amphora aging, the porous clay delivering regular micro-oxygenation that integrates grippy seed tannins without adding oak character. What no peer at this scale does: zero-sulfite orange wine produced under full Demeter biodynamic certification, every decision — harvest date to bottling — governed by the lunar calendar. The current vintage delivers the textural density of skin contact tempered by Languedoc aromatic generosity; drink now through 3–4 years for peak phenolic integration.
