La Chablisienne's Le Finage originates from the cooperative's holdings across Chablis's Kimmeridgian limestone plateau, where oyster-shell fossil deposits define the subsoil. Elevation ranges 150–200 meters on north-facing slopes that delay ripening and preserve acidity.
The fruit undergoes temperature-controlled fermentation in stainless steel, with no oak aging—a deliberate choice that allows the mineral substrate to dominate the sensory profile. Malolactic fermentation is typically arrested or minimal, preserving the wine's linear structure and citric tension.
Le Finage represents the house style: a non-vintage or vintage Chablis that prioritizes terroir expression over fruit ripeness. The wine's backbone is the limestone itself—flint, wet stone, and saline minerality that emerge from the first sip and persist through the finish. This is Chardonnay stripped to its skeletal elegance, without the softening influence of oak or extended aging.
