Jermann's Sauvignon DOC originates from Collio, the limestone-rich plateau straddling the Italy–Slovenia border in northeastern Friuli-Venezia Giulia. The vineyard soils are predominantly calcareous marl and flysch, with elevations between 100–200 meters, providing cool nights and extended ripening windows that preserve aromatic intensity.


The house employs extended skin contact — a technique uncommon for Sauvignon Blanc in this region — followed by fermentation in stainless steel at controlled temperatures. Post-fermentation, the wine undergoes lees aging on fine sediment for several months, building textural weight and suppressing the herbaceous volatility typical of unoaked Sauvignon. This approach yields a wine with mineral backbone rather than tropical fruit dominance.


The special feature is Jermann's refusal of oak and malolactic conversion, allowing the limestone minerality and fermentation-derived complexity to dominate. Drink from release through 4–5 years; the wine gains secondary depth with brief cellaring but remains fresh-driven.
