Soave Classico Doc
฿
SaleLeonildo Pieropan was among the first to bottle single-vineyard Soave in the 1970s, a move that forced the appellation to take its own hillside terroir seriously. The estate's holdings sit within the Soave Classico zone, the original medieval core around Soave and Monteforte d'Alpone, where volcanic basalt and dark basaltic tufa soils over clay deliver a saline, stony tension absent from the alluvial plains that dominate the broader DOC. Elevation and the cooling influence of Monte Lessini push ripening later, preserving natural acidity in the Garganega grape — the variety that makes up the majority of the blend, with Trebbiano di Soave completing it. Fermentation takes place in stainless steel to protect the variety's delicate aromatic profile, with the wine spending time on fine lees to build texture without obscuring the site's mineral character. What separates this from most Soave DOC is geography alone: the Classico designation restricts fruit to the original hillside communes, where volcanic geology produces a wine with measurably more structure and longevity than its flatland counterparts. Drink within three to five years of vintage to catch the interplay between citrus-pith freshness and the slow-building almond and white stone-fruit character Garganega develops with brief bottle age.
