Semiollon-Sauvignon Blanc

West Cape Howe's Sémillon-Sauvignon Blanc originates from Mount Barker, a subregion of Western Australia's Great Southern zone positioned at 300+ metres elevation on the Porongurup Range. The vineyard sits on gravelly loam over limestone—a geological signature that channels mineral tension into the final wine.

The blend marries Sémillon's textural weight with Sauvignon Blanc's aromatic volatility. Cool fermentation in stainless steel preserves primary fruit definition; the Sémillon component typically undergoes partial malolactic conversion, softening acidity while retaining the wine's linear structure. No oak aging allows the limestone minerality and varietal character to dominate.

This is a food-driven expression built for restraint rather than extraction. The interplay between Sémillon's stone-fruit density and Sauvignon's herbaceous snap creates a wine that gains complexity over 3–5 years in bottle, though it drinks with immediacy upon release.
