Calera's Central Coast Chardonnay originates from limestone-rich hillside vineyards across California's Central Coast appellation, where cool Pacific influence and elevated sites (1,200–1,600 ft) moderate ripening and preserve natural acidity. The winery's signature approach employs stainless-steel fermentation without malolactic conversion, a deliberate rejection of the buttered oak-aged style that dominated California Chardonnay in the 1990s. This technique preserves the wine's mineral backbone and citrus-driven aromatics, allowing limestone soil character to dominate the palate. The result is a food-friendly expression that prioritizes terroir transparency over extraction—a philosophical stance Calera has maintained since its founding in 1978 by Josh Jensen, who sought to prove that cool-climate Pinot Noir and restrained Chardonnay could rival Burgundy from California limestone.
