Montes Sparkling Angel Brut originates in Apalta, a subregion of Casablanca Valley positioned at elevation where Pacific fog moderates diurnal temperature swings, preserving acidity in cool-climate fruit. The vineyard site benefits from the valley's maritime influence—cool nights and morning marine layer create conditions favourable for sparkling wine production.
The wine is produced via traditional méthode champenoise: base wine undergoes secondary fermentation in bottle, followed by extended aging on the lees (tirage period), which develops complexity and fine bubble structure. The dosage is calibrated for Brut classification (residual sugar under 12 g/L), allowing acidity and mineral tension to dominate the palate.
The special feature lies in Montes' commitment to cool-climate sparkling production in Chile—a category historically dominated by still wines. This expression demonstrates how Casablanca's fog-driven terroir can rival traditional sparkling regions in achieving the balance of ripeness and acidity essential to the style.
