Elise Dechannes operates in the Côte des Bar, the southernmost terroir of Champagne, where chalk-marl soils and continental climate favor Pinot Noir ripeness. This Coeur de Noir is a blanc de noirs—100% dark-skinned grapes—vinified to Extra Brut dosage (under 6g/L residual sugar), amplifying mineral tension over fruit sweetness.
The cuvée undergoes extended aging on primary lees, developing brioche and hazelnut complexity while preserving the chalky, saline edge characteristic of Côte des Bar. The extra brut classification strips away dosage masking, exposing the raw acidity and phenolic structure of Pinot Noir fermented in temperature-controlled vessels. Dechannes' commitment to minimal intervention—no malolactic conversion in certain parcels—locks in the wine's linear, mineral-driven profile.
This is a transgressive champagne: darker, drier, and more austere than the house-style norm, built for extended cellaring rather than immediate consumption. Current release shows primary stone fruit and graphite; expect further complexity development through 2032.
