Nocturne Sec is Taittinger's deliberate departure from the house's Brut orthodoxy — the only cuvée in the range carrying a Sec dosage, positioned explicitly for after-dark, sweeter-occasion drinking. That decision is grounded in the same Chardonnay-dominant philosophy that defines the house: the blend leans on Chardonnay's chalky tension to keep elevated residual sugar from collapsing into flatness. Taittinger's 288 hectares span chalk-rich soils across the Côte des Blancs, Montagne de Reims, and Marne Valley — the same high-drainage, high-acidity chalk subsoil that underpins every cuvée in the range and provides the structural backbone that makes a Sec style viable without cloying weight. Fermentation is conducted in temperature-controlled stainless steel to preserve primary aromatics; only first-pressing juice is used; and the wine ages well beyond the 15-month appellation minimum in the 4th-century Gallo-Roman crayères beneath the former Abbey of Saint-Nicaise in Reims. At disgorgement, ascorbic acid is added to the liqueur d'expédition alongside jetting, reducing SO₂ dependency while locking in freshness — a technical signature applied across the range. What sets Nocturne apart within its category is the rarity of a Sec-dosage Champagne from a grande marque with this level of Chardonnay proportion: most Sec cuvées lean on Pinot Meunier for softness, whereas Taittinger's chalk-driven Chardonnay spine keeps the sweetness precise rather than plush. As a non-vintage blend, it is consistent across releases and drinks well upon disgorgement.
