When Cédric Bouchard founded Roses de Jeanne in 2000, he became the first grower in the Aube to bottle a single-vineyard, single-vintage Champagne — a Burgundian parcellaire philosophy planted in a region the establishment had long dismissed as second-tier. La Presle is a 100% Pinot Noir expression, no varieties blended, no vintages blended, no exceptions.
The fruit originates from the Côte des Bar, Aube, on Kimmeridgian clay-limestone soils — the same geological formation that defines Chablis, roughly 20 km to the southwest — delivering the saline, oyster-shell minerality that runs as a structural thread through every Bouchard wine.
Vinification is uncompromising: first-pressing juice only (tailles discarded), indigenous yeast fermentation in stainless steel with no oak contact at any stage, malolactic fermentation completed, and tirage dosed at approximately 15 g/l targeting ~4 bars of pressure — barely two-thirds of the Champagne norm — producing a mousse so soft and integrated that Bouchard recommends serving in a Burgundy glass, not a flute. The wine is unfined, unfiltered, and zero dosage.
Yields held at an extreme 20–30 hl/ha — less than a third of the regional average — concentrate the Kimmeridgian terroir into a density that reads more vinous than effervescent. Drink now or cellar with confidence.
