Founded in 1894 by Arthur Agrapart — predating the modern grower-Champagne movement by nearly a century — this Avize-based Récoltant-Manipulant has always bottled under its own label, a radical act of terroir declaration long before the term entered Champagne's vocabulary. Terroirs NV is the house's entry-point argument: 100% Chardonnay sourced from all four Grand Cru villages in the Côte des Blancs — Avize, Cramant, Oger, and Oiry — each sitting on east-facing chalk slopes where belemnite subsoil drains freely and retains warmth, compressing fruit and amplifying saline, mineral tension over richness. The blend draws from two base vintages with approximately 40% reserve wines held in equal parts old cask and stainless steel, building textural complexity without obscuring geological character. Base wines ferment in thermoregulated stainless steel at ~22 °C before six months' élevage in old oak; indigenous yeasts throughout; full malolactic fermentation completed on all cuvées. Lees aging runs a minimum of 36–48 months; the wine is released unfined and unfiltered at Extra Brut, 5 g/L dosage. Where most NV Champagnes blend for house consistency, Terroirs deliberately exposes the geological contrast between four distinct Grand Cru chalk expressions in a single assemblage. Expect chalk-driven salinity, citrus pith, and white-flower tension; drink now through 2030+.
