Delamotte Brut (375 ml)
฿1,495
Founded in 1760 by François Delamotte, this Le Mesnil-sur-Oger house carries a structural secret: in years when Salon does not declare a vintage, contracted Le Mesnil grapes flow directly into Delamotte's blending pool — making this the only NV Champagne in the world with a documented, recurring supply link to one of Champagne's most coveted single-vintage cuvées.
The fruit draws from deep belemnite chalk soils across Côte des Blancs Grand Crus — Le Mesnil-sur-Oger primary, with Avize, Oger, and Cramant — plus Pinot Noir from Montagne de Reims Grand Crus (Ambonnay, Bouzy, Tours-sur-Marne). That chalk subsoil, rich in marine fossils, delivers the saline tension and razor-edged acidity that define the house's signature.
Vinification is entirely in stainless steel, preserving primary fruit and chalk-driven mineral precision. Reserve wines from a minimum of three harvests are maintained in cellar and blended into the NV, building textural continuity across the non-vintage. No malolactic fermentation details are confirmed for the Brut, though the Chardonnay-dominant architecture keeps acidity structurally prominent.
What separates this from any other entry-level Grand Cru Brut is that undeclared-Salon-vintage fruit pipeline — a supply chain no other NV house can replicate. Drink now through 3–4 years from purchase, with the chalk minerality and citrus tension at their most expressive in the near term.
