Bernard Bichot began trading wine in Monthélie in 1831, but the structural decision that defines this house today came nearly two centuries later: rather than centralising all production in Beaune, sixth-generation Albéric Bichot deliberately maintains six geographically dispersed estate wineries, each vinifying only the wines of its own sub-region. The Origines Bourgogne is produced at the Beaune facility — renovated in 2008 — applying the same non-interventionist protocol used across the entire portfolio to a regional-AOC Pinot Noir.

Sourced from négociant partner growers across Burgundy's core sub-regions, the fruit undergoes a cold soak of 6–8 days before fermentation in thermoregulated conical oak vats and/or stainless steel, with 18–20 days total maceration. Aging runs in French oak — predominantly Tronçais and Allier forest barrels, light toast, approximately 20% new oak, the remainder in vat — calibrated to amplify fruit character rather than impose wood structure. Gravity racking is used throughout to minimise handling.

What separates this entry-level cuvée from most négociant Bourgogne is the house's insistence on applying identical vinification logic — cold soak, thermoregulated fermentation, light-toast Tronçais — at every appellation tier, rather than reserving technique for Grand Cru labels. The warm 2023 vintage delivered excellent sanitary conditions and a fresh, aromatic profile; reds show bright red-fruit purity and are approachable now through 2027.
