Millaman's Paya de Millaman Cabernet Sauvignon originates from the Paya vineyard in Curicó Valley, a region positioned in Chile's Central Valley where diurnal temperature swings between warm days and cool Pacific-influenced nights create optimal ripening conditions for Cabernet Sauvignon. The vineyard sits at moderate elevation with alluvial soils typical of the valley floor, allowing for balanced fruit maturation.

The wine is produced using traditional Cabernet vinification—destemmed fruit undergoes temperature-controlled fermentation in stainless steel, followed by aging in a combination of French and American oak. This dual-oak regime imparts subtle vanilla and spice notes without overwhelming the primary fruit character, a hallmark of Millaman's restrained house style.

The 2019 and subsequent vintages show ripe blackcurrant and plum on the nose, with a medium body that avoids heaviness despite full ripeness.
