Rockford Rifle Range Cabernet Sauvignon
฿4,000
Rockford's Rifle Range Cabernet Sauvignon originates from a single vineyard site in the Barossa Valley's mid-elevation terrain, where decomposed granite and red loam soils produce concentrated fruit with natural acidity retention. The vineyard's low-yielding vines—a deliberate constraint—force phenolic ripeness into smaller crops, a philosophy Rockford has maintained since the 1980s.
Production approach: Hand-harvested fruit undergoes traditional open-top fermentation with extended skin contact, building tannin structure without over-extraction. Maturation in French oak (proportion and duration vary by vintage) allows secondary development while preserving primary Cabernet character. No fining or filtration is standard practice, leaving the wine unpolished and textural.
Special character: This is a Barossa Cabernet that resists the region's riper, jammy stereotype—Rifle Range's aspect and soil composition yield wines with darker berry definition and mineral undertone rather than confected fruit. The unfined presentation means sediment may develop; decanting 30–45 minutes before service is recommended.
Drinking window: 5–15 years from vintage, though structure supports longer cellaring in cooler storage.
