−19%When Rafael Cañizares and Jorge Ordóñez founded Bodegas Volver in 2004, their deliberate provocation was to take La Mancha — Spain's bulk-wine engine — and prove that a single, named vineyard could produce a wine demanding serious attention. The vehicle was Finca Los Juncares in Cuenca province, where Tempranillo vines planted in 1957 had survived largely because no co-operative found them worth the effort.
At 700 m elevation, the 29-hectare finca sits on poor sandy soils over clay subsoil with limestone patches, receiving a punishing 242 mm of annual rainfall. Dry-farming forces roots deep; the continental temperature swings during ripening — up to 20°C between day and night — preserve acidity in fruit that would otherwise cook flat at lower altitude.
In the cellar, hand-sorted grapes ferment in open-top stainless steel with indigenous yeast at ~28°C, then undergo malolactic fermentation in barrel before 14–15 months in new and second-fill French oak barriques (225 L). The wine is bottled unfiltered, a commitment rare at this price point in La Mancha. The special feature here is provenance transparency: a single-vineyard DO La Mancha Tempranillo, estate-grown from 60+ year-old vines, unfiltered, at a price most peers charge for blended, co-operative fruit.
