Ruber Cabernet Sauvignon
฿
La Carraia's Ruber Cabernet Sauvignon originates in Umbria, Italy's inland region where volcanic and clay-rich soils define the terroir. The vineyard sits at moderate elevation in a continental climate with significant day-night temperature variation—conditions that preserve acidity and prevent overripeness in Cabernet Sauvignon, a late-ripening variety rarely planted in central Italy.
The wine undergoes temperature-controlled fermentation in stainless steel, a technique that emphasizes varietal character over oak extraction. Aging occurs in neutral oak or stainless steel, allowing the wine's natural structure to emerge without heavy wood influence. This restraint is deliberate: Umbrian Cabernet rarely achieves the phenolic density of Tuscan counterparts, and the winemaker respects that distinction.
The special feature here is geographic transgression—Cabernet Sauvignon is not a traditional Umbrian variety, yet La Carraia's expression demonstrates how volcanic soils and cool-climate viticulture can produce a food-centric red that avoids the overextraction common in warmer regions. The result is a wine built for the table rather than the cellar, with tannins that integrate rather than dominate.
Drink now through 2027 for optimal freshness and acidity.
