Domaine Audiffred Pommard "en Mareau"
฿4,500
Henri Audiffred spent 14 years at Domaine de la Romanée-Conti before returning in 2007 to reshape his family's 5-hectare estate — and the Pommard 'En Mareau' is where that DRC-forged discipline meets Côte de Beaune muscle. The 'En Mareau' parcel sits on old alluvium and Oxford marl, a clay-rich Jurassic substrate that gives Pommard its characteristic grip and iron-tinged depth, with 50-year-old vines drawing from reserves that younger plantings cannot reach. Vinification begins with 100% destemming and a brief cold maceration, followed by wild-yeast fermentation in wooden vats over 15–18 days with pigeage and remontage at least three times daily — a regime that extracts structure without brutality. Élevage runs 16–18 months in exclusively old oak — zero new wood — a deliberate inversion of the new-barrique orthodoxy still common among Côte de Nuits peers, ensuring the marl-driven terroir character is never masked by toasty overlay. The wine is bottled manually, unfined and unfiltered. What distinguishes this cuvée within the Pommard appellation is the combination of old-vine depth, old-oak transparency, and a grower whose formation was shaped by Burgundy's most exacting address. The 2022 vintage delivered generous ripeness across the Côte de Beaune with freshness intact — expect this to reward 3–8 years of cellaring.
