When Jean-Pierre Guyon resolved not to uproot a single vine after taking full management in 1991, the decision was agronomic as much as philosophical — the 80-year-old massale-selected Pinot Noir in the Hautes Maizières and Les Chalandins plots that compose this cuvée sits directly adjacent to Premier Cru Les Suchots, and vine age alone concentrates what the appellation's clay-limestone soils deliver: tightly wound red-fruit precision and a structural depth that village-tier Burgundy rarely achieves. The 2021 vintage, low-yielding and demanding across the Côte de Nuits, compressed those qualities further, producing wines Berry Bros. & Rudd flagged as benchmarks for Guyon's low-intervention approach under pressure.

In the cellar, 100% whole-cluster fermentation proceeds via the proprietary 'en nuage' technique — a 30-person sorting team hand-removes central rachis stems, leaving intact berry clusters — followed by 4–5 days cold pre-fermentation maceration and a 25–28 day cuvaison at 27–29°C, managed by hand with a watering can rather than mechanical pump-over. Élevage runs 10–14 months in one-year-old French oak barrels, then 3–4 months in stainless steel before biodynamic-calendar bottling, unfiltered and unfined. What sets this apart: Guyon applies the full 'en nuage' protocol to his village wines — a commitment no other Côte de Nuits domaine extends across an entire range. The 2021 drinking window favours patience; the vine age and vintage tension suggest 2026–2033.
