Donnafugata's Cuordilava sits on the northeastern flank of Mount Etna, where basaltic and pumice soils at 700–900 metres elevation channel cool night air through the Ionian strait's influence. The aspect—steep, north-facing—slows ripening and preserves acidity in the indigenous Nerello Mascalese grape.
Fermentation occurs in temperature-controlled stainless steel, followed by 12 months in French oak barrels (30% new), with extended lees contact to build textural complexity. The producer deliberately avoids over-extraction, allowing the volcanic terroir's mineral signature to dominate the fruit expression.
Cuordilava translates to 'heart of lava'—a deliberate naming choice that anchors this wine to Etna's geological identity rather than the producer's broader portfolio. This expression prioritises site over winemaker signature, a philosophy that distinguishes Donnafugata's Etna work from their Marsala-region holdings.
The 2021 vintage carries the cool-vintage character typical of high-altitude Etna: lean structure, pronounced acidity, and mineral persistence that extends through the finish. Drinking window: 2024–2032.
