Penfolds Bin 707 Cabernet Sauvignon

When Max Schubert's successors needed a Cabernet Sauvignon counterpart to Grange, they turned to Kalimna — Penfolds' 290-hectare Barossa Valley property where Cabernet vines have grown in ancient, deep alluvial and sandy loam soils since the 1880s, on ground that phylloxera never reached. That geological continuity is not incidental: ungrafted old vines in low-vigour sandy loam produce naturally concentrated, small-berried fruit with tightly-knit tannin architecture that no replanted vineyard can replicate. Bin 707 is 100% Cabernet Sauvignon, sourced multi-regionally across South Australia, and matured in 100% new oak — both American and French hogsheads — a regime more aggressive than any other wine in the Penfolds portfolio outside Grange itself. Where Bin 389 inherits second-fill barrels previously used for Grange, Bin 707 demands virgin wood, driving a deeper integration of cedar, graphite, and dark cassis into the wine's frame. The special feature here is the deliberate inversion of Old World logic: no single château, no appellation boundary, yet the winemaking team's multi-regional selection achieves a structural consistency across decades that single-site Cabernets rarely match. The 2022 vintage is drawn from a growing season that followed several years of La Niña-influenced rainfall recovery in South Australia, delivering fruit with natural freshness alongside the density the Barossa floor provides; drink 2030–2045+.
