Castello Della Sala By Antinori Pinot Nero Umbria IGT
฿฿
Castello della Sala, Antinori's flagship estate in Umbria's Chiani Valley, sits at 450–550 meters elevation on volcanic soils rich in pozzolana and limestone—a terroir that channels cool-climate rigor into thin-skinned Pinot Nero. The vineyard's northern aspect and morning mists delay ripening, preserving acidity and delicate phenolic structure.
This expression undergoes temperature-controlled fermentation in stainless steel, followed by 12 months in French oak (30% new), allowing the wine to develop complexity without overwhelming the varietal's transparency. The restraint is deliberate: Antinori's winemaking philosophy here prioritizes site expression over extraction, resulting in a wine that reads as mineral-driven rather than fruit-forward.
The special signature is the wine's savory mid-palate—a function of volcanic minerality and extended lees contact—which distinguishes it from warmer-climate Pinot expressions. Drinking window: 2–8 years from vintage.
