Lungarotti's L'Um represents the modern expression of Torgiano's volcanic terroir, a subregion within Umbria where the Tiber River valley creates a distinctive mesoclimate. The vineyard sites sit on clay-rich soils with volcanic mineral content, at moderate elevation where diurnal temperature swings sharpen acidity and phenolic ripeness.
The blend centers on Sangiovese, supplemented with Canaiolo and other Tuscan varieties. Fermentation occurs in temperature-controlled stainless steel, followed by aging in large Slavonian oak casks (botti) rather than small barriques—a choice that preserves varietal character and allows the wine's structure to emerge without oak dominance. The extended contact with neutral wood softens tannins while maintaining freshness.
L'Um's distinction lies in its refusal of modern extraction: this is a wine built on restraint and site expression rather than concentration. The volcanic minerality cuts through the mid-palate, anchoring what could otherwise read as a straightforward Sangiovese blend into something with genuine complexity and aging potential.
Drink 2024–2032. Best served at 16–17°C to preserve the wine's acidity and aromatic lift.
