When Tammawit 'Tiger' Limlertcharoenwanich founded Onson in 2020, he rejected every conventional base material in Thai white spirit production — rice, molasses, sugarcane — and revived a pre-modern central plains ingredient: caramelized coconut flower sap (nam wan dok maphrao), sourced additive-free from traditional nectar farms in Samut Songkhram. The caramelization of the raw sap before fermentation is the defining technical decision: it builds aromatic depth and natural sweetness into the wash before a single drop is distilled.
The distillery occupies a concrete warehouse on the outskirts of Sakon Nakhon city, Isan — a landlocked northeastern province of rice paddies and rolling hills near the Mekong basin. Under Thailand's community distillery license, electricity is capped at 5 horsepower, mandating wood-fire heating of the still and limiting the team to six people, making every bottle a product of extreme artisanal constraint. Fermentation proceeds in food-grade containers under ambient conditions, with no climate control.
The result is an unaged, clear spirit with no wood contact — bottled directly after distillation. What makes Onson categorically singular: Thai excise law prohibits labeling it as gin, vodka, or rum, yet its floral, delicately sweet profile reads closer to an unaged botanical spirit than any rice- or molasses-based lao khao on the market. No peer in Thai craft distilling uses this base material at commercial scale.
