When Tammawit 'Tiger' Limlertcharoenwanich founded Onson in 2020, he rejected every conventional Thai white spirit base — rice, molasses, sugarcane — and revived a pre-modern ingredient tradition: caramelized coconut flower sap (nam wan dok maphrao), sourced additive-free from traditional nectar farms in the Samut Songkhram region of the central plains. That caramelization step, applied before fermentation, is the technical heart of Onson's identity — it drives the natural floral depth and residual sweetness that no grain or molasses wash can replicate.

The distillery operates from a concrete warehouse on the outskirts of Sakon Nakhon city, Isan — a landlocked northeastern province of rolling hills and rice paddies near the Mekong basin. A Thai government community license caps the facility at 5 horsepower of electricity, mandating wood-fire heating of the still and limiting the team to six people, making every micro-batch a product of extreme artisanal constraint. Fermentation occurs in food-grade containers under ambient, uncontrolled conditions.

The result is bottled as an unaged, clear spirit with zero wood contact — a lao khao that carries a floral, gin-adjacent profile without a single botanical addition. Thai excise law prohibits Onson from labeling it as gin, vodka, or rum, leaving it legally nameless within any international category. No other Thai craft distillery uses caramelized coconut flower sap as its sole fermentable base.
