When Tammawit 'Tiger' Limlertcharoenwanich founded Onson in 2020, he rejected every conventional Thai white spirit base — rice, molasses, sugarcane — and revived a pre-modern ingredient: caramelized coconut flower sap (nam wan dok maphrao), sourced additive-free from traditional nectar farms in Samut Songkhram on the central plains. That single sourcing decision makes Onson categorically unlike any other lao khao in commercial production.
The sap is caramelized before fermentation — a deliberate step that builds aromatic depth and natural sweetness into the wash before the still is even lit. Fermentation occurs in food-grade containers under ambient Isan conditions at the concrete distillery on the outskirts of Sakon Nakhon city, a rural northeastern province of rice paddies and rolling hills near the Mekong basin. The still is heated by wood fire, mandated by a Thai government community license that caps electricity at five horsepower — the equivalent of two hair dryers — and limits the operation to six employees.
The result is an unaged, clear spirit with no wood contact, bottled directly from distillation. Its floral, delicately sweet profile draws frequent gin comparisons, yet Thai excise law prohibits Onson from using that label. Every bottle is produced in micro-batches of only a few thousand units annually — a hard ceiling imposed by regulatory constraint, not commercial choice.
