For its first five decades, GlenAllachie operated as an anonymous blending workhorse for Chivas Brothers — its spirit dissolved into Clan Campbell and Chivas Regal with no single malt identity of its own. When Billy Walker acquired the distillery in 2017, he slashed output by roughly 87% and deployed one of Speyside's most hands-on cask programmes, with over 30% of distillate maturing in premium ex-Sherry wood — the foundation this Oloroso finish draws directly from.

The distillery sits at the foot of Ben Rinnes near Aberlour, Banffshire, drawing process water from Blackstank and Heanshead Dams fed by spring- and snowmelt streams on the mountain's north-east slopes. That cold, mineral-rich water supports a 160–164 hour fermentation in 60,000-litre stainless steel washbacks — among Scotland's longest standard fermentation windows — engineered specifically to maximise ester formation and build the muscular, fruit-dense new make that Oloroso wood can amplify rather than overwhelm.

The spirit is double-distilled through lantern-shaped wash stills and onion-shaped spirit stills fitted with horizontal shell-and-tube condensers (an energy-efficient gravity-fed layout unique to the site), then finished in first- and second-fill Oloroso Sherry casks under Walker's strict no-third-fill policy. Bottled at a minimum 46% ABV, non-chill filtered, natural colour — no cosmetic intervention.

What sets this expression apart is the deliberate pairing of an unusually long fermentation-derived ester load with Oloroso's oxidative, walnut-and-dried-fruit character, producing a density rarely achieved at this price point in Speyside.
