Wolfburn Single Malt Whisky Year of The Bull (700 ml)

Wolfburn was revived on Burns Night 2013 at Henderson Park, Thurso — just 350 metres from the rubble of William Smith's original 1821 distillery — after more than 150 years of silence, making this Year of the Bull release part of the distillery's earliest maturing stock. Process water is drawn from the Wolf Burn itself, a spring-fed stream naturally filtered through Caithness flagstone, arriving at the stills crystal-clear and cold, contributing to the house's characteristically clean, light-bodied spirit. Two Forsyths copper pot stills — a 5,500-litre wash still and a 3,600–3,800-litre spirit still fitted with a reflux bowl — drive additional copper contact, deliberately engineering a fruity, biscuity profile over weight or peat. Long fermentation in four ex-Caperdonich stainless steel washbacks amplifies that fruit-forward character before distillation. Maturation takes place in traditional dunnage warehouses on-site (clay floors, maximum three casks stacked), where the proximity to the north Caithness coast imparts a mild maritime edge. Wolfburn is one of the only Scottish distilleries to distil, mature, and bottle entirely on-site with zero automation — the Year of the Bull is non-chill filtered and naturally coloured, bottled at 46% ABV. As an NV limited release, it draws on the distillery's cask diversity (ex-Bourbon, Oloroso Sherry, and Port) to frame a celebratory expression that no age-statement peer from this latitude can replicate.
