In 2019, Balblair abandoned the vintage-release format it had championed since 2007 — one of very few Scottish distilleries ever to label by distillation year — and returned to age statements, making this 12-year-old the current entry point into a house style built on structural patience. The distillery sits on the southern shore of the Dornoch Firth near Edderton, Ross-shire, on an ancient Pictish site marked by the standing stone Clach Biorach; water is drawn from the Allt Dearg burn, piped roughly five miles from the Edderton Hills — the same source used since 1790. Fermentation runs approximately 62 hours in Oregon pine washbacks, generating a clean, ester-forward wash; distillation proceeds through squat, onion-shaped copper pot stills at a deliberately slow pace, producing a new make filled to cask at roughly 68.5% ABV — well above the Scottish industry norm of ~63.5% — which slows extraction and extends the effective maturation curve. The 12-year-old rests exclusively in ex-bourbon American oak hogsheads and barrels inside traditional dunnage warehouses dating to 1894, their beaten-earth floors moderating temperature and humidity to minimise angel's share. Bottled at 46% ABV, non-chill-filtered, natural colour — no caramel addition across the entire core range. That unusually high fill strength means the spirit at 12 years retains more of its original orchard-fruit and citrus character than most Highland peers of the same age.
