When Aurora Brewing Ltd. revived Wolfburn in 2013 — on Henderson Park, Thurso, just 350 metres from the ruins of William Smith's original 1821 distillery — they made a deliberate choice to automate nothing. Every stage from milling through on-site bottling is entirely manual, a grain-to-glass integrity claim almost no Scottish distillery of any scale can match. Process water is drawn from the Wolf Burn itself, a spring-fed stream naturally filtered through Caithness flagstone, arriving crystal-clear and cold at the most northerly whisky distillery on the Scottish mainland. The north-coast proximity imparts a mild maritime salinity during maturation in traditional dunnage warehouses — clay floors, low ceilings, casks stacked no higher than three. Distillation runs through two Forsyths copper pot stills; the spirit still features a reflux bowl for additional copper contact, deliberately pulling the new make toward a lighter, fruitier profile. Long fermentation in stainless steel washbacks — repurposed from the closed Caperdonich distillery — builds the biscuity, fruity character that defines the house style. Small Batch No.458 is bottled at 46% ABV, non-chill filtered, with no artificial colouring, at Wolfburn's own on-site bottling facility. The special feature here is the batch-specific cask selection within a fully manual, zero-automation production chain — a level of hands-on traceability that larger Highland peers cannot replicate. Drink now through the mid-2030s.
