−3%When Masataka Taketsuru founded the Yoichi Distillery in 1934 at the base of the Shakotan Peninsula, he chose this site precisely because its cool, fog-laden maritime microclimate and peat-rich surroundings mirrored the Scottish Highlands he had trained in — a deliberate act of terroir transplantation that shaped every technical decision that followed.
Yoichi sits where mountains on three sides funnel sea-breeze and river fog off the Sea of Japan, with distillery water drawn from snowmelt via the Yoichi River. That cold, mineral-laden water, combined with the coastal saline air during maturation, drives the malt's characteristic weight and coastal character.
The defining technical signature is direct coal-fired distillation through straight-head pot stills with downward lyne arms — the same configuration once used at Longmorn in Scotland. Coal firing generates intense, uneven heat that retains heavier congeners and complex sulphurous compounds that steam-heated stills would drive off. The result is a spirit of unusual density and textural grip before a single day in cask.
Yoichi is now one of the last distilleries anywhere in the world to use direct coal-fire — a method abandoned globally for being labour-intensive and technically demanding — making this expression categorically unreplicable by any peer.
As a non-vintage expression, the house style prioritises consistency of that heavy, peated maritime profile; the drinking window is open now and will reward cellaring of 5–10 years for further integration.
