When Master Blender Stephanie Macleod assembled the 30 Year Old, she extended Dewar's proprietary Double Aging philosophy to its most elaborate form: component single malts and grain whiskies matured separately, blended by type, re-casked, then combined as a finished blend and rested again — a four-stage process Dewar's claims as the first of its kind in the industry. At the core sits Aberfeldy single malt, drawn from the Pitilie Burn, a natural artesian spring on the eastern outskirts of Aberfeldy in the Highland Perthshire hills above the upper River Tay. That cold, mineral-rich water, combined with extra-long fermentation in larch washbacks and medium-height onion-shaped copper pot stills, produces a new make of pronounced heather honey and beeswax — a signature that three decades in predominantly American oak ex-bourbon casks deepens rather than erases. Supporting structure comes from Craigellachie's worm-tub-condensed Speyside malt and the delicate fruit of Royal Brackla, with the final rest in an expressive finishing cask integrating up to 30 component whiskies into a single coherent whole. What separates this expression from peers at the same age statement is that marrying period: where most aged blends are bottled immediately after blending, the 30 Year Old undergoes a further oak rest post-assembly, smoothing the seams between decades-old malts and grain without masking their provenance. No vintage applies; character is consistent across batches by design.
