Glenfiddich Grand Chateau 31 Years Old (700 ml)
฿95,229
William Grant built Glenfiddich by hand in 1886, sourcing every stone from the Conval Hills above Dufftown — the same hills that shelter the Robbie Dhu Spring, the sole water source used from mash to reduction. That geological specificity matters here: the Grand Château's base spirit spent its first decades in predominantly ex-bourbon American white oak before entering a 9-year finish in Bordeaux wine casks, the longest finishing regime in the entire Grand Series and a duration that crosses from 'finish' into something closer to a second maturation. The Conval Hills valley microclimate — cooler and more stable than open Speyside — slows extraction in the stone-walled dunnage warehouses, preserving the distillery's signature swan-neck still delicacy even across three decades. Those small pear-shaped wash stills (~9,000 L) and spirit stills (~4,500 L), maintained by in-house coppersmiths to preserve exact shape consistency, produce a light, high-ester new make that carries fruit character through extended oak contact without being overwhelmed. The Bordeaux cask influence — tannin structure, dried dark fruit, subtle graphite — sits in direct tension with Glenfiddich's house lightness, producing an internal contradiction that no standard Speyside 30-year-old replicates. Bottled at Dufftown, reduced with Robbie Dhu spring water; filtration status at this tier not confirmed from official sources.
