Highland Park's origin story begins with illicit distilling on Orkney's Holm Road hillside — a site so geographically isolated that its defining raw material, heather-peat hand-cut from Hobbister Moor seven miles southwest, cannot be replicated anywhere else on the planet. Trials with mainland peated malt confirmed it: the whisky simply changes. Orkney's peat is shallow, tree-root-free, and dense with heather and fern, kilned to ~20 ppm phenol — producing aromatic floral smoke entirely unlike the medicinal, tarry character of Islay. The distillery draws from a hard-mineral spring source, unusual among Scotch producers, and matures in 19 traditional earthen-floor dunnage warehouses under Orkney's cool, consistent North Sea maritime climate — conditions that slow oxidation and preserve aromatic complexity across the full 15-year span. Roughly 20% of the malt is floor-malted on-site using traditional hand-turning — one of only a handful of Scottish distilleries still doing so — then vatted with ~80% unpeated mainland malt before double distillation through low-reflux, pear-shaped stills that yield a medium-heavy new make. Since approximately 2004, all casks used are ex-Oloroso sherry-seasoned European and American oak, both first-fill and refill, sourced directly from Spanish producers. What distinguishes the 15-year expression within the core range is the additional maturation time beyond the 12 YO, allowing the sherry-oak dried-fruit register to fully absorb and soften the heather-smoke without either element dominating the other.
