In 1930, Wick voted itself dry under the Temperance (Scotland) Act — shuttering Pulteney Distillery for 21 years, the only major Scottish distillery ever closed by local prohibition rather than commercial failure. That enforced silence ended in 1951, and the distillery has since matured spirit in five warehouses sitting roughly 300 metres from the North Sea, where cold, high-humidity coastal air and clay-floored dunnage conditions drive a slow, saline-inflected maturation unlike anything achievable inland.
The 21 YO rests in a documented split of 65% first-fill ex-Bourbon American oak and 35% Fino Sherry butts — an unusually dry sherry influence that amplifies the distillery's inherent brine rather than sweetening over it. The new make itself carries exceptional weight: the wash still's oversized boil ball and flat-topped truncated swan neck (cut short to fit the still-house ceiling) restrict copper contact and produce an oilier, heavier spirit than any other Highland distillery of comparable size. Worm-tub condensers preserve that texture through to the final cut.
What no peer replicates is the convergence of architecturally constrained distillation geometry, Fino rather than Oloroso sherry influence, and two decades of genuine North Sea warehouse exposure — the salinity here is structural, not incidental. Bottled at 46% ABV, the 21 YO drinks with the density of a much older whisky while retaining coastal lift.
