When T.T. Lee founded Kavalan in 2005 inside King Car Group's portfolio, the deliberate choice to forgo warehouse air-conditioning was a technical wager: upper-floor casks at Yuan Shan Distillery, Yuanshan Township, Yilan County, routinely reach 42°C in summer, driving wood extraction at a rate that renders four to six years of Taiwanese maturation broadly equivalent to 15–25 years in Scotland. Snow Mountain spring water — naturally filtered through gravel and sand from the Xueshan Range (peak 3,886 m) — forms the distillation base, contributing a characteristic creaminess that runs through every Kavalan expression.

The new-make spirit is built for fruit: a three-stage fermentation cycle in closed stainless-steel washbacks runs approximately 60–72 hours total, with a dedicated 'fruit producer' yeast strain generating ester development before a final lactic round adds textural depth. Double distillation through Forsyths copper pot stills (12,000-litre wash / 7,000-litre spirit) uses a narrowed spirit cut of 65–55% ABV — tightened from the original 78–72% range specifically to increase complexity. The ex-Bourbon Oak expression then rests in American oak ex-bourbon casks, which in Yilan's subtropical microclimate yield pronounced vanilla, coconut, and ripe tropical fruit without the extended timeline demanded by cooler climates.

What separates this from any Scotch bourbon-cask expression is the climate itself: the same wood regime produces a fundamentally different flavour trajectory when ambient warehouse temperatures swing between 24°C and 42°C within a single building.
